- 2 cups pinto bean, drained and rinsed
- 4 cups eggplant, cubed
- 1 tbsp olive oil
- ½ tsp salt
- 3 tbsp lime juice
- 1 tsp cumin
- 1 tbsp aji amarillo paste
- 1 red onion, cut into wedges

How to make it

Heat the oven to 425°F. Toss the pinto bean, eggplant, and red onion with olive oil, salt, and lime juice, cumin, aji amarillo paste on a sheet pan.

Roast, turning once, until browned and tender. Cook until the pinto bean is hot and the vegetables are tender.

Rest for 3 minutes, then divide among four plates.
