- 2 cups pinto bean, drained and rinsed
- 4 cups eggplant, cubed
- 1 tbsp olive oil
- ½ tsp salt
- 3 tbsp lime juice
- 1 tsp cumin
- 1 tbsp aji amarillo paste
- 4 whole-wheat tortilla
- 2 cups spinach

How to make it

Cook the pinto bean and eggplant with olive oil and salt in a skillet. Cook until the pinto bean is hot and the vegetables are tender.

Stir together the lime juice, cumin, aji amarillo paste and coat the pinto bean mixture.

Divide the filling and spinach among the whole-wheat tortillas and roll tightly.
Storage & leftovers
Refrigerate in a covered container within 2 hours and use within 4 days.
