  • 2 cups black bean, drained and rinsed
  • 4 cups sweet potato, peeled and diced
  • 1 tbsp olive oil
  • ½ tsp salt
  • 2 tsp berbere seasoning
  • 2 tbsp tomato paste
  • 2 cloves garlic, minced
  • 12 lettuce

How to make it

    Heat the olive oil in a skillet; cook the black bean and sweet potato with salt. Cook until the black bean is hot and the vegetables are tender.

    Stir in the berbere seasoning, tomato paste, garlic and cool for 3 minutes.
