  • 1 lb sweet potato, peeled and cut into 1/2-inch cubes
  • 15 oz black bean, drained and rinsed
  • 8 corn tortilla
  • 2 cups green cabbage
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp lime juice

How to make it

    Heat the oven to 425°F. Toss the sweet potato with the oil, cumin, and paprika on a sheet pan. Roast for 15 to 18 minutes, turning once, until browned and tender.

    Warm the black beans in a small saucepan with 2 tablespoons water.

    Warm the tortillas. Fill each with sweet potato and beans, then top with cabbage and lime juice.

Storage & leftovers
