  • 1½ lb potato, cut into 1/2-inch cubes
  • 4 cups green cabbage, thinly sliced
  • 1 onion, thinly sliced
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt

How to make it

    Cover the potatoes with water in a microwave-safe bowl and microwave for 5 minutes. Drain thoroughly.

    Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the potatoes and cook for 8 to 10 minutes, turning occasionally, until browned.

    Add the remaining oil, cabbage, onion, garlic powder, and salt. Cook for 8 to 10 minutes until the cabbage is tender and browned at the edges.

Storage & leftovers

Refrigerate for up to 4 days.

Reheat in a lightly oiled skillet until hot and crisp at the edges.
