- 1½ lb chicken breast, cut into 1-inch pieces
- 4 cups brown rice
- 4 cups broccoli, cut small
- 1½ cups chicken broth
- 1 cup milk
- 2 tbsp cornstarch
- 1½ cups cheddar cheese, divided
- 1 tbsp olive oil
- ½ tsp salt

How to make it

Heat the oven to 375°F. Oil a 9-by-13-inch baking dish.

Heat the olive oil in a skillet over medium-high heat. Cook the chicken for 5 to 6 minutes, stirring, until lightly browned but not necessarily cooked through.

Whisk the broth, milk, cornstarch, and salt in the baking dish. Stir in the rice, broccoli, chicken, and 1 cup cheddar.

Cover tightly and bake for 20 minutes. Uncover, stir, top with the remaining cheese, and bake 8 to 10 minutes more, until bubbling and the chicken reaches 165°F.
Storage & leftovers
Refrigerate within 2 hours and use within 4 days.
Reheat covered until the center reaches 165°F.
