  • 4 cups eggplant, cubed
  • 1 tbsp olive oil
  • ½ tsp salt
  • 3 tbsp lime juice
  • ¼ cups cilantro, chopped
  • 2 cloves garlic, minced
  • 1 red onion, cut into wedges

How to make it

    Heat the oven to 425°F. Toss the chicken breast, eggplant, and red onion with olive oil, salt, and lime juice, cilantro, garlic on a sheet pan.

    Roast, turning once, until browned and tender. Cook the chicken breast until the center reaches 165°F.

    Rest for 3 minutes, then divide among four plates.
