  • 4 cups pumpkin, peeled and cubed
  • 1 tbsp olive oil
  • ½ tsp salt
  • 1 cup coconut milk
  • 2 tbsp lime juice
  • 1 tbsp ginger, grated
  • 1 red onion, cut into wedges

How to make it

    Heat the oven to 425°F. Toss the chicken breast, pumpkin, and red onion with olive oil, salt, and coconut milk, lime juice, ginger on a sheet pan.
