  • 1½ lb eggplant, cut into 1-inch cubes
  • 3 cups brown rice, hot
  • 3 tbsp miso
  • 1 tbsp rice vinegar
  • 2 tsp ginger, grated
  • 2 tsp maple syrup
  • 1½ tbsp olive oil
  • 3 scallion, sliced

How to make it

    Heat the oven to 425°F. Toss the eggplant with the olive oil and roast on a sheet pan for 18 minutes.

    Whisk the miso, rice vinegar, ginger, maple syrup, and 2 tablespoons water. Toss with the eggplant and roast for 5 minutes more until glazed.

    Divide the rice and eggplant among bowls and top with scallions.
