- 1 tbsp olive oil
- ½ tsp salt
- 3 tbsp lemon juice
- 1 tsp dill
- 1 tsp oregano
- 3 cups polenta
- 1½ cups vegetable broth
- 1 cup onion

How to make it

Heat the oven to 375°F. Combine the chicken breast, tomato, polenta, vegetable broth, onion, olive oil, salt, and lemon juice, dill, oregano in a baking dish.

Bake until bubbling and set at the edges. Cook the chicken breast until the center reaches 165°F.
