- 2 cups black bean, drained and rinsed
- 2 bunches asparagus, cut into 2-inch pieces
- 1 tbsp olive oil
- ½ tsp salt
- 3 tbsp lime juice
- ¼ cups mint, chopped
- 1 tbsp ginger, grated
- 6 cups romaine

How to make it

Whisk the lime juice, mint, ginger, olive oil, and salt in a large bowl.

Cook the black bean if needed, then cool slightly. Cook until the black bean is hot and the vegetables are tender.

Storage & leftovers
