- 1½ lb chicken breast, cut into pieces
- 4 cups carrot, sliced
- 1 tbsp olive oil
- ½ tsp salt
- 2 tbsp miso
- 2 tbsp rice vinegar
- 1 tbsp ginger, grated
- 1 red onion, cut into wedges

How to make it

Heat the oven to 425°F. Toss the chicken breast, carrot, and red onion with olive oil, salt, and miso, rice vinegar, ginger on a sheet pan.

Roast, turning once, until browned and tender. Cook the chicken breast until the center reaches 165°F.

Rest for 3 minutes, then divide among four plates.
Storage & leftovers
Refrigerate in a covered container within 2 hours and use within 4 days.
Reheat leftovers to 165°F throughout.
