- 2 cups black bean, drained and rinsed
- 4 cups brussels sprout, halved
- 1 tbsp olive oil
- ½ tsp salt
- 3 tbsp tahini
- 3 tbsp lemon juice
- 1 tsp cumin
- 3 cups vegetable broth
- 2 cups tomato
- 1 bay leaf

How to make it

Heat the olive oil in a large pot; cook the black bean with the brussels sprout, bay leaf, and salt for 5 minutes.

Stir in the tahini, lemon juice, cumin, vegetable broth, and tomato; simmer gently. Cook until the black bean is hot and the vegetables are tender.
