- 2 cups black bean, drained and rinsed
- 4 cups sweet potato, peeled and diced
- 1 tbsp olive oil
- ½ tsp salt
- 3 tbsp lime juice
- 1 tsp cumin
- 1 tbsp aji amarillo paste
- 2 cups romaine

How to make it

Whisk the lime juice, cumin, aji amarillo paste, olive oil, and salt into a dressing.

Cook the black bean with the sweet potato in a large skillet. Cook until the black bean is hot and the vegetables are tender.
