- 12 oz wheat pasta
- 2 cups chickpea, drained and rinsed
- 4 cups eggplant, cubed
- 1 tbsp olive oil
- ½ tsp salt
- 3 tbsp lime juice
- 1 tsp cumin
- 1 tbsp aji amarillo paste

How to make it

Cook the wheat pasta according to the package directions; reserve 1 cup pasta water and drain.

Heat the olive oil in a large skillet; cook the chickpea with the eggplant, salt, and lime juice, cumin, aji amarillo paste. Cook until the chickpea is hot and the vegetables are tender.

Fold in the wheat pasta, adding reserved pasta water as needed to coat the chickpea and eggplant.
Storage & leftovers
Refrigerate in a covered container within 2 hours and use within 4 days.
Reheat until steaming throughout.
