- 1½ lb chicken breast, cut into pieces
- 2 bunches asparagus, cut into 2-inch pieces
- 1 tbsp olive oil
- ½ tsp salt
- 1 tsp cumin
- ½ tsp cinnamon
- 2 tbsp lemon juice
- 1½ cups coconut milk
- ¾ cups vegetable broth
- 3 cups polenta

How to make it

Heat the olive oil in a large skillet; cook the chicken breast and asparagus with salt for 5 minutes.

Stir in the cumin, cinnamon, lemon juice, coconut milk, and vegetable broth; simmer gently. Cook the chicken breast until the center reaches 165°F.

Spoon the curry over the polenta and serve hot.
